Greece is definately on my suggestion list if you are someone who would just like to sit my crystal clean, bluish blue water and watch the sunset with harmony of timeless greek music…. GREEK COOKING


I can’t stop admiring the greek cuisine and music since I came back from there this summer. Greek food is delicious forsure and this one is something that vegetarians are gonna love and jus enjoy eating.  Donot recommend it when you are on cheese free diet!
Ingedrients:
  • 1 Aubergine
  • 1 chopped tomato into small cubes
  • 1 choppedonion
  • green olives
  • Feta cheese
  • olive oil
  • salt, pepper, chilli flake to taste
Heat the oven to 180 degrees. Cut aubergine into long slices like bread loaf, 1 aubergine can give around 6 slices. Heat a pan, and put 1/2 spoon olive oil and roast the aubergine to both sides on low flame until tender.  Remove it and place on a baking plate, on every slice of aubergine add equal quantity of some onion tomato and olives as much as to cover it completely as a pizza topping. Sprinkle some feta cheese on top and salt pepper and chilli flake to taste. Put it in the oven and heat until brown and crisp.
Serve with citrus drink!
Fact: Low in calorie and high in fibre. Aubergine has high amount of fibre and is very low in calorie and contains 0% fat. Olives is high in mineral, fibre and protein and considered very effective for healthy skin!! The only fat intake in this dish is feta cheese with minimal quanity. Having a citrus drink with this recipe helps cut fat intake from cheese !  Try it with freshly squeezed orange juice and eat healthy!! :)

INDISK OST CURRY, SHAHI PANEER


Yes absolutely, it sounds rather unbelievable to have shahi paneer recipe in a healthy eating corner!!! I tried it , its quick and has very less calories.
Ingredients:
  • Paneer (cottage cheese) cut into cubes
  • 1/2 cup Low fat milk
  • 1 table spoon low fat butter
  • 1/2 spoon vegetable or or olive oil
  • tomato puree
  • Salt, garam masala, red chilli powder, kastoori methi powder, cardemom powder, ginger paste.
  • 1 big Chopped onion, 2 Table spoon Ketchup
In a nonstick pan put the oil, let it heat for a while, mix choppen onion, ginger, cardemom and let it be brown(3to 4 min)when you see its absolutely brown put 1/4th cup of water and mix all the masala’s (2 to 3 min)except kastoori methi powder. When you see that onion, water and all masala’s have blended well in a paste then add tomato puree, tomato ketchup and butter in the quanity mentioned and keep stirring with a spoon for 2 mintues. Now put the milk and paneer. Mix and sprinkle the kastorri methi and cover it for 6 to 7 min on low flame.
Ready to serve with water Drained bowled rice!
  • Heavy cream changed with low fat milk(1/2 cup)
  • Oil and butter reduced in very minimal quantity
  • Less time consuming
  • Always serve with starch drained rice.
Reason to eat with starch drained rice is ; paneer and rice both are high in protein. Draining out the starch reduces the protein content of rice to almost 2 to 3% which makes it  light! 1 protein+1 protein= Fat. Avoid this combination and eat healthy!!:)

Fruit SMOOTHIE


Just when I thought to switch to healthy eating, I actually wanted to start with healthy yet reasonably tasteful stuff…strawberry and peach smoothie can be a good start, it was delicious yet healthy!!!
  • Ingredients:
  • 2 cups of fresh sweet strawberries
  • 1 cup of sliced peach
  • 1 cup of vanilla low fat yoghurt
  • 2 spoons low cal sugar
  • ice
Put all the ingredients mentioned above in a mixer and blend it till a consistency is achieved. Serve chilled with ice.
Calorie intake- 195-200 calories. Enjoy!!:)

I belong there but I don't belong there

How is it start everyday with a heavy and stuffed  head like a dominos double crust pizza with stuffing of cheese… and dozenz  of insubstantial worries dropping their feet down with you from the bed as you wake up….
Insignificant things or say chief issues for those who forsee it like..
The housemaid on leave and  the house on fire……..
The cook ran away with lots of stories to  be cooked behind….
No water to take bath seems like a deserted mind….
being late for work, stuck in traffic and if at all you get a minute to breath and think, the maximum you can think of is either you are gona’ be fired for being late or what should be cooked for dinner…….
Nothing comes easy  to you, bargain for a dozen of fruits or scream at peak of your voice to buy a bus ticket from the bus conductor or say being checked and scanned  at a metro station as bad as someone being deported from New york airport…wooo…..

Just with all this hush and torcher episode you actually manage to reach work or say
I managed to reach a client for a meeting….pulling out my visiting card trying to open my laptop with presentation and looking forward for a great meeting…..
”Ms. Priyanka”, said the lady at the reception desk in a lazy  rotten voice  jus as if she stuffed herself durin lunch and now is jus waiting to be back home and lay down to let the calories penerate deeper in her body and belong to the group of shapeless ladies who stroll in a near by garden in the evening with gossips about their housemaids thinking they are soon gona be resembling shilpa shetty and their husbands would vow on them…..’jesusss. ..spare me….neways’…
She called my name to allow me in for a meeting….their  sat a typical 45 year old Delhi businessman, short, stout,vicious and nasty..specs low on eyes and high on nose…..tight fitted sweater  and all his energy into getting an accent….I didn’t expect anything much from him apart from an  one hour long bargain and negotiation session….turn  off it was…..
Just trying to unwind  my dayback at home when I have lots of things waiting for me…..the hot selling topic of housemaids,  sister not serious about studies which is so normal and usual for a teenager…..but…..the list on for mingle sessions with relatives who do not care for me and I do not care for them…..but must meet…the call of society you see….woo a huge word to sink  in…..with all these discussions when  I try to find an hour to jus surf internet, check mails ,read gossips on the internet…the electricity goes off …..wow…..jus as perfect as a strawberry icing on the cake…….time to sleep and wake up again with a heavy head………..
And I am back here now…..to Stockholm and I feel this is such a place for me…my thoughts, I can wake up to sip a hot cup of tea gazing at a dark sky with soft cotton like snow dripping down my balcony,

get ready for work….travel in an empty train with my favourite music playing in my ipod….when at work ,work with professionals,  like a professional…..back home I have time to read, write, think, relax and no doorbell ringing, no phones, no heavy dozes….thats how I feel Ican survive…
and thats why I feel I belong there butt…..I don’t belong there…..another… but what belongs there is my parents, my roots, my culture, my friends..so I love India for some reasons  but find it hardd to find myself or feel amongst them……anyone with me on that>?
