Greece is definately on my suggestion list if you are someone who would just like to sit my crystal clean, bluish blue water and watch the sunset with harmony of timeless greek music…. Salmon Chowder


 

Ingredients


  • 100 gms of salmon or Chicken
  • 1 vegetable stock or chicken stock
  • 2 carrots, half potato, 2 stems celery
  • 1 clove garlic
  • Half onion
To taste
  • 1 spoon paprika
  • Salt to taste
  • Black pepper
  • Senap pulver(Mustard powder)(Optional)
  • Dill or coriander
  • Lemon zest
  • 1 lemon juice squeezed
  • 2 tbs oil
  • Low fat fresh cream or low fat milk
  • 2 and half cup water
Heat a pan and put 1 tablespoon oil and put in the finely chopped onions and garlic, cook until light brown.
Then in the pan, put in the finely chopped potatoes, Carrots, celery and stir well with the onions and garlic and stir them well for about 3 minutes on high flame.

Lower the flame, put in the lemon zest and then 1 cup of water, paprika, and salt to taste black pepper and bring to boil for 5-8 minutes.
In an another pan take 1 tablespoon oil and the salmon, salt, pepper and stir just a little bit so salmon gets bit cooked.  Put in the vegetable stock and ½ cup water, mix it well and pour the salmon in the other pan with the rest of the ingredients. Pour in 1 cup milk or the fresh cream and ½ cup more water and let all the ingredients boil for 10 minutes till the carrots and potatoes are cooked well.
You will notice the water has reduced, the consistency has thickened and vegetables are cooked, that’s when you soup is Ready.
Garnish with Dill and some more black pepper and lemon juice!

Indian Salmon curry with Senap

This is a quick Indian salmon curry shared by a very special friend :)

This one is with minimal Indian spices for those who could find it hard to first get all the Indian spices stocked in the kitchen

Ingredients

250 Gms of salmon sticks
1 Potato
Lemon juice

For Curry

Colman Senap Powder(available in almost all grocery stores)
Ginger and garlic to taste
1 Red Onion Chopped
Salt and Black pepper
Kumin seeds
red paprika powder(optional)
Tomato puree(3 spoons or 1  big spoon)
Water 1 1/2 cup
Mint leaves for Garnish

Basmati Rice

Preparation Time 20-25  Minutes

In a Pan heat some cooking oil...When the Oil is hot enough, put in the chopped onion, chopped potato, garlic and ginger...and sauté them till they are nicely done and brown...

Cut you salmon into small cubes in the meanwhile.....

In this pan put in the Cumin seeds, black pepper, red paprika powder, and one big spoon of Colmans senap powder.....and lower the flame...and put in your salmon with it now.....

Mix the onion, potato, salmon well with all the other ingredients and now is time to put half cup of water so everything blends well.....

Now add in the salt and the tomato puree...... and mix well..make sure your salmon doesn't break .....

After giving it a nice stir , put the rest of the 1 cup water and cover the lid and let it cook for 10-12 minutes...on low flame.....

While this is being done....you can boil your Basmati Rice....and chop some salad if you like....

When the curry is done....squeeze half a lemon juice and garnish with Mint leaves...and Serve hot with water drained Basmati Rice and salad....
